I have a crazy sweet tooth...especially when breastfeeding! But eating refined sugars is something I try to avoid since they always leave me feeling like garbage!

I was on the hunt for a delicious yet healthy dessert recipe that I could enjoy without the guilt that comes with eating a bunch of sugar, or the aftermath of how that sugar makes me feel!

Here is a super easy guilt-free chocolate pudding recipe!


Ingredients:

  • 1 medium Japanese sweet potato
  • 1 medium avocado
  • 1/3 cup cocoa powder
  • 1/3 cup coconut milk
  • 1 1/2 tsp vanilla
  • 3 tbsp maple syrup

Directions: 

  1. Roast or air fry your sweet potato at 400°F for 30-40 minutes, or until fork tender
  2. Combine cooled sweet potato with all other ingredients in a blender and combine until smooth! 

That's it! How easy!

To serve: can be enjoyed immediately but I prefer to allow it to cool in the refrigerator overnight. Can be topped with whatever toppings you like! 

Topping ideas:

  • coconut flakes
  • fresh berries
  • chocolate shavings or chips
  • chia seeds
  • whipped cream
