Looking for an easy grab-and-go breakfast or healthy and satisfying snack? Then this blueberry chia seed pudding is a MUST.
The chia seeds help to make you feel full as they are packed with fiber, can improve heart health, and reduce cholesterol levels! If you can find the, use wild blueberries as they are high in vitamins, minerals, micronutrients, and have twice the amount of antioxidants that other blueberries do! They are great for fighting inflammation, and have both heart and brain health benefits!

Bonus: my toddler loves this recipe! And you can turn it into an activity and make it together!

Ingredients:
  • 1 can of coconut milk
  • 1/3 cup chia seeds
  • 1 cup wild frozen blueberries
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
Directions:
  1. Pour all ingredients into a blender and blend until combined
  2. Divide among 2-3 air tight containers and place in fridge overnight
To serve:
  • Can be enjoyed as is but I enjoy adding toppings for some extra flavor and crunch!
Topping ideas:
  • Coconut flakes
  • Fresh berries 
  • Granola
  • Yogurt
