This recipe is SO easy and packed with flavor. If you eat bread, I highly recommend toasting up a baguette to soak up all of the delicious juice!

Or you can pair this shrimp with the viral Thomas Keller zucchini (I like it prepared like this)

Prep Time: 1 hr 5 minutes                  Cook Time: 10 minutes               Total Time: 1 hr 15 minutes

Ingredients:

  • 1/2 cup olive oil
  • 2 tbsp Cajun seasoning (I like Slap Ya Mama)
  • 2 tbsp parsley (fresh is preferred, but if you don't have it dried is fine!)
  • 2 tbsp lemon juice
  • 1.5 tbsp coconut aminos (or 1 tbsp soy sauce)
  • 1 pinch cayenne pepper
  • 1 lb shrimp, cleaned and deveined

Instructions:

  • Preheat the oven to 450F
  • Combine all of the ingredients (except shrimp) in an oven safe dish or cast iron skillet
  • Add the shrimp and mix to coat
  • Marinate in the refrigerator for at least 1 hour
  • Bake for approximately 10 minutes or until shrimp are cooked through, stirring occasionally
